Crockpot Apple butter, do I have to peel them?

I bought a 1/4 bushel of Gala apples at the farmer's market.  I like to make mine in the crockpot and usually freeze it but this year thought I would can it.  This year they are very small and won't fit on my apple peeler do you think I could cook them down in their natural state and can them, or do I need to run them through the food mill.  I also don't put in but a little sugar as we like it better that way.

Just a guess here, but I’d say peel them.
More work, but it would probably be worth it in the long run.

I peel them, if I cant use the apple peeler on them I do the smaller ones by hand with a paring knife, here is the recipe I follow;



CROCK POT APPLE BUTTER   

Approx. 3 lb. apples
3 c. sugar
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. cloves
Dash of salt
3/4 c. water

Fill crock pot 3/4 full of peeled, cored sliced apples. Add remaining ingredients and stir until evenly mixed. Cover and cook on low overnight. If butter has too much liquid, remove lid and cook on high until of desired consistency.

That sounds so good and I love apple butter.  How do you preserve it?  Do you can it?  What process?

The Ball book says not to peel or core but put through a food mill after cooking.  My opinion would be that that'd be easier than peeling all those apples??

That's what mine says too, I finally got my new one yesterday after I'd lost the other one. I do mine in the crockpot because it gets so rich and thick and reminds me of the apple butter we get at Silver Dollar City in the fall, but may just try the one in the book.  His apples will be on for about 3 weeks so I may make several batches and see what works best.

you don't have to peel them, if you have ablender,or avita mixer,you  don't have to peel them.
I have done it like that before, and it iswonderful. after it has finished cooking, vita mix it, th eskin just goesaway, and the butter is left so smooth,and remember, the peelings is what has the vitamins in them. I never peel, and throw it away , if I can help it.

do you have a hand cranked food mill? I use that for apple butter...then I steep the peelings for apple syrup.

Yep I have a Foley food mill so I am going to cook them down according to the book and then run them through the mill. Thanks everyone!

RIE811 that was my question. Is there anything you can do with the peels? How do you make your apple syrup?

I am going to try a batch of applesauce in the crockpot.  We like ours really think, and chunky.  Not sure how much I will have to put thru the food mill and how much I will just need to chop for the chunks.  Does anyone who likes chunky applesauce have a general ratio they can share?

sorry I didn't reply...I have been having internet issues ( I am so sorry we went w/ the DSL) anyhow. I take the apple peeplings...add a small amount f water...then sugar and apple spice. I slowly reduce it down to a thickness I like...using it over oats or pancakes...it's thinner then commercial syrup but tastes great. You must keep it refrigerated. I add a tiny sliver of lemon zest to the bottle before I put it away.
