I found a recipe for Beef lunchmeat
I modified it some for deer meat.
I started it yesterday and cooked it today
It is very good. I will be making more of this.
Deer Lunchmeat
3 pounds of ground deer(finely ground,)
3 T. curing salt (or pickling salt or plain, uniodized salt)
1 cup water
1/8 t. garlic powder
1/2 t. onion powder
1 1/2 t. liquid smoke flavoring
In a large bowl, mix together ground beef, salt, water, garlic powder, onion powder, and liquid smoke, using your hands.
Divide in half and form each half into a log .
Wrap in foil and refrigerate 24 hours for the flavors to develop
Preheat oven to 300 degrees.
Place in a roasting pan on a wire rack.
With a fork poke some hole on bottom and sides to let any liquid drain
Bake for 1 1/2 hours, turning the rolls every half hour. Meat will feel firm when done.
You may need to cook longer depending on your oven.
Cool to room temperature, then refrigerate until chilled. Slice and eat on sandwiches.
This can be wrapped in foil and frozen for up to 6 months (at least)
