Our fig trees are overflowing with ripe fruit. We've called in all the friends & family to pick what they want. And we still have a bounty coming on. Since figs are SO perishable and I can only make so many preserves, we tend to try the rest.
DH loves dried figs and the flavor is SO intense and sweet. He snacks on them right out of the jar. No additional sugar necessary! The best ones are very ripe, almost to the point of being overripe.
Wash and cut stems, slice in half and place CUT SIDE UP on your flexible screen trays. Dry at 135* for at least 12 hours. They should be dry & hard but still a bit flexible.
