Someone asked a few days ago for my recipe for strawberry jam. I wasn't sure if this was the proper heading, so if not please feel free to move.
Strawberry Jam
2qts strawberries
1pkg powdered pectin
1/4 cup lemon juice
6 cups sugar
Wash strawberries, drain, remove stems. Crush strawberries one layer at a time. Combine strawberries, pectin, and lemon juice in large sauce pot. Bring to a boil, stirring occasionally. Add sugar, stirring until dissolved. Return to rolling boil. Boil hard 1 minutes, stirring constantly. Remove from heat and skim foam if necessary. Ladle hot jam into hot jars, leaving 1/4 inch head space. Adjust two piece lids and caps. Process 15 minutes in boiling water bath canner. Makes not quite 4 pints. **Edited to add** I have two kettles going at the same time so I end up with 7 pints to fill the water bath canner.
